Yes, only 4 ingredients
This 4 ingredient chickpea parcel is the perfect lunch, dinner or snack during your luteal phase / inner Autumn. Especially when the desire to cook and get creative in the kitchen can be dwindling!
It is rich in fibre, slow burning, complex carbohydrates to support your blood sugars as well as warming, curried spices to give you a hug from the inside out. PS this is a serving for 1, just double or triple the recipe to feed more hungry bellies X
What you will need:
1 can of chickpeas- rinsed and drained
100g spinach, washed
2 teaspoons of green curry paste- I used Ayam for this one
Puff pastry- I used Simply Wize GF pastry available at Woolworths
Method
Pre-heat oven to 180 degrees. Remove 1 sheet of pastry to defrost on the bench.
In a small pan, heat olive oil and add chickpeas. Cook until soft.
Add green curry paste and stir. Add spinach. Cook until wilted.
Option: I find the pastry sheets quite thick, so I used a rolling pin to slightly roll it thinner
Using a knife, slice the pastry diagonally, so you have 2 triangles.
Spread the mixture evenly across both triangles. Fold and using a fork, seal the edges
Option to sprinkle sesame seeds and put in the oven for 20-25 minutes or until golden
Remove and serve with a warm side salad, roast vegetables or anything else your heart desires
