Gluten Free baked GOODNESS, perfect to support your luteal and menstrual phases of the Menstrual Cycle!
Here in Sydney, the taste of Summer came in for a hot minute and unfortunately left just as quick.
To get you through the cooler days, these baked and stuffed apples are SO soul soothing.
These apples are ideal to support your luteal and menstrual phase as we get closer toward hibernation and our internal “Winter."

Without further ado, here is the recipe angel's!
What you'll need:
6 apples (medium sized)
1 can of coconut milk
1/2 cup of organic polenta
1/2 cup water
1/2 cup chopped dried fruit of choice (I used apricots, you can use dates, figs, goji)
2 tbspn sesame seeds
1 tbspn maple syrup
1 tspn cinnamon
Method:
Pre-heat oven to 180c
Remove the core from the apples using a knife or apple corer (plz keep your fingers intact)
Place apples in a deep dish that fits them all
In a pot, lightly toast the polenta and sesame seeds for 5 minutes before adding
half a can of coconut milk, the water and maple syrup
Add the dried fruit and stir for 10 mins
Remove from heat and begin stuffing the apples with the mixture using a teaspoon
Pour the remainder of the coconut milk into the base of the dish and sprinkle with cinnamon
Bake for 20-30mins until golden on top
Serve with coconut yoghurt or icecream 👏
