She's gluten free, flourless, packed with walnuts and dressed in pear. What more could you want?
Recipe
Ingredients
4 very ripe bananas
3 eggs (free range plz and thankyou)
1/2 cup coconut flour
3 tbsp rice malt or maple syrup
2 tbsp corn flour (this makes it light and fluffy)
1/2 cup walnuts
1/2 a pear
2 tsp cinnamon
2 tsp vanilla essence
1 /2 tsp baking soda
Pinch of salt
Method
Pre-heat the oven to 180 degrees c
In a large bowl, mash the bananas with a fork
Add the rest of the ingredients and stir thoroughly (excluding the pear)
Scoop the mixture into a bread tin
Top with sliced pear and cinnamon
Bake for 40 minutes
**You can stick a sharp knife into the centre, if it comes out clean, it is ready!
Leave to cool before lathering a slice with butter!
Makes 5-7 slices
