For a quick, easy and cheap dinner!
This one is a monthly favourite that regularly makes its way into my Cycle Syncing meal planning!
This chicken and vegetable noodle dish can slot into your follicular and ovulation phase as you can add extra cruciferous vegetables such as broccoli and Brussels sprouts to encourage estrogen detoxification.
It provides a balanced, protein rich meal that will keep you full and satisfied!
Ingredients
1 bunch of broccolini, roughly chopped
1 carrot- grated
1 bok choy, chopped
500g minced chicken or mashed tofu
Handful of Brussels sprouts, finely sliced
2 garlic gloves- minced
2cm piece of ginger- peeled and grated 100g vermicelli rice noodles
1 can of water chestnuts, drained
5 tbs tamari or soy sauce
4 tbs sesame oil
1 tbs hot sauce
3 tbs sesame seeds, toasted
Method
Fill a large pot with boiling water and add vermicelli noodles. Cover and leave to sit for 10 minutes.
In a wok, heat sesame oil
Add garlic and ginger, stir for 2 minutes or until fragrant
Add carrot and Brussels sprouts, stirring for 5 minutes
Add broccolini, bok choy, tamari and water chestnuts, stir until almost cooked
Add chicken mince and stir for 10-15 minutes or until cooked
Drain vermicelli noodles and add to the chicken and vegetables. Stir well.
Serve and top with toasted sesame seeds
