You don't have to be the cookie monster to enjoy these choc-chip cookies!
I’ve never been much of a cookie girl.. wait for it… but I recently had this MAJOR craving for a hot, moist and GF choc-chip cookie that wasn’t full of crap or store bought.
I’m not really the greatest baker either. Give me flour, eggs and sugar and I probably wouldn’t know what to do with them… Give me dates, a heap of nuts, coconut oil, cacao and the cooking ideas are endless!
BUT I tried my baking skills out and surprisingly these were absolutely HEAVENLY!
These cookies were so damn tasty that I actually had to put some in a separate container for myself so that my hoover-like family didn’t gobble them all up!
Recipe
Ingredients
1 egg
1/2 cup buckwheat flour
1/2 cup coconut flour
1/4 cup coconut sugar
1/3 cup rice malt syrup
1/2 cup almond milk (or any milk)
1/2 cup dark chocolate chips
1 tspn vanilla extract
1/2 tsp baking powder
Pinch of salt
Method
Pre-heat oven to 180°
Line 2x trays with baking paper
Place all ingredients (except the choc-chips) in a bowl and mix with a wooden spoon until well combined
Add the choc-chips and gently stir
Using a tablespoon, spoon out approximately 15 small balls of dough and spread evenly across the 2 trays
Using a fork, push down on each ball so that it forms a cookie-like shape
Bake for 20-25 minutes (depending on the strength of your oven- mine is crapola)
Makes approx 15 cookies
